Lentil soup is delicious and a great dish to enhance with your favorite vegetables, meats, herbs, and spices. Packed with protein, vitamins and minerals, lentil soup is healthy and nutritious. Lentil And Smoked Sausage Soup
Ingredients -
2 tablespoons Olive Oil
7 ounces Dry Lentils
1 small Onion, chopped
3/4 cup finely shredded Green Cabbage
1 clove Garlic, crushed
2 Vegetarian Smoked Sausages, diced
1 (16 ounce) can Diced Tomatoes
2 cubes Vegetable Bouillon
4 cups Water
1 Bay Leaf
1 teaspoon Thyme Leaves
1/2 teaspoon Cayenne Pepper
Salt and Pepper, to taste
Preparation:

1. Add oil to saucepan and heat over medium heat.

2. Add dry lentils, chopped onion, green cabbage, and garlic.

3. Cook 5 minutes, or until onion is tender.

4. Stir in smoked sausage and diced tomatoes.

5. Crush vegetable bouillon cubes and add to soup. Pour in water.

6. Stir in bay leaf, thyme leaf, and cayenne pepper.

7. Bring to a boil over high heat.

8. Reduce heat, cover and simmer 30 minutes.

9. Season with salt and pepper.
