Dried lentils, vegetable broth, sliced Canadian-style bacon, chopped carrots, cubed potato, chopped onion, chopped celery, water, dried thyme leaves, sea salt and fresh ground black pepper are added to
a crock pot and slow cooked all day or overnight.
Ingredients -
1 (16 ounces) package Dried Lentils, sorted and rinsed
2 (14-1/2 ounces each) cans Vegetable Broth
1 (6 ounces) package sliced Canadian-Style Bacon, coarsely chopped
2 medium Carrots, cut into 1/2-inch pieces
1 medium Baking Potato, peeled and cut into 1/2-inch pieces
1 medium White or Yellow Onion, chopped
1 medium Celery Stalk, cut into 1/2-inch pieces
4 cups Water
1 teaspoon Dried Thyme Leaves
1/2 teaspoon Sea Salt
1/4 teaspoon Fresh Ground Black Pepper
Preparation:
1. Combine all ingredients in large crock pot. Give good stir.
2. Cover and cook on LOW 9 hours or HIGH for 5 hours.
3. Stir well before serving.

Storing Dry Lentils
Dry lentils will take on moisture as they are stored, so it is not a good idea to mix lentils purchased at different times as their moisture content may be very different. Store dried lentils in their packaging or in airtight containers in
a cool, dry location.
