Crockpot Lentil Soup

Presoaked lentils added to water in stockpot and simmered to soften. Ground meat sautéed with onion, and garlic until browned; fat drained. Lentils, sautéed ground meat, canned tomatoes, allspice, water, and coarse salt added to crock pot. Soup is simmered on low 5 to 6 hours. Lemon juice added just prior to serving.

Ingredients -
2 cups Lentils
1 pound Ground Beef or Ground Turkey
1 medium Onion, chopped
1 clove Garlic, minced
3 stalks Celery, diced
1 quart canned Tomatoes
1/8 teaspoon Allspice
2 to 3 teaspoons Salt, to taste
Fresh Lemon Juice, optional
 
Preparation:

1. Add lentils to large bowl. Cover with water and soak 30 minutes.

2. Drain lentils in strainer. Rinse several times.

3. Add lentils to saucepan. Cover with water. Bring to a boil over high heat. Reduce heat to medium low and simmer 20 minutes.

4. Drain lentils in strainer.

5. Meanwhile, saute ground beef or turkey, chopped onion and minced garlic until meat browns completely. Drain off fat.

6. Add lentils, ground meat, tomatoes, allspice and salt to crockpot.

7. Add enough cold water to cover.

8. Cover and cook on low 5-6 hours.

9. Add water as necessary.

10. At serving time add a few drops of lemon juice.
