Italian Sausage and Lentil Soup

Soup prepared from browned sausage, chopped onion, chopped celery, chopped carrot, chopped zucchini, chicken broth, diced tomatoes, minced garlic, sea salt, and dried lentils. Individual servings are topped with Parmesan cheese.

Ingredients -
1 pound Italian Sausage, browned, crumbled and drained
1 large Onion, chopped
1 Celery Stalk, chopped
2 large Carrots, chopped
1 small Zucchini, chopped
6 cups Chicken Broth
2 (14.5 ounces each) cans diced Tomatoes, undrained
2 Garlic Cloves, minced
1 teaspoon Sea Salt
2 cups Dried Lentils, rinsed
Fresh Ground Black Pepper, Red Pepper Flakes, Basil, Oregano, Parsley, Thyme, to taste
Parmesan Cheese
 
Preparation:

1. Add browned sausage, chopped onion, chopped celery, chopped carrot, chopped zucchini, chicken broth, diced tomatoes, minced garlic, sea salt, dried lentils and seasonings to stockpot.

2. Bring to a boil over medium high heat.

3. Reduce heat to low, cover stockpot and simmer for 1 hour or until lentils are tender.

4. Add additional water, if necessary, for desired consistency.

5. Garnish individual servings with parmesan cheese, serve.

Storing Lentils

Lentils will keep indefinitely if stored properly. Leave unopened lentils in original packaging, or place opened lentils in airtight container. Place lentils in a cool dry location. Long storage of lentils may fade the color slightly.
