Lentil Garlic Soup

Easy soup combines lentils, onion, chicken broth, tomato paste, cumin and fresh minced garlic. Simmered over low heat and served with lemon wedges.
Ingredients -
2 cups Dry Lentils
2 quarts Chicken Broth
1 Onion, diced
1/4 cup Tomato Paste
2 cloves Garlic, minced
1 tablespoon Ground Cumin
Lemon Wedges
 
Preparation:

1. Add dry lentils, chicken broth, diced onion, tomato paste, garlic, and ground cumin to large saucepan.

2. Bring to a boil over medium high heat.

3. Reduce heat to low, cover and simmer 40-45 minutes.

4. Serve with lemon wedges.

Preparation

Preparation is a matter of removing debris and lentils that do not look right, rinsing them in a strainer and placing them in boiling water for approximately 20 minutes.
