Seven Bean And Vegetable Soup

Mix of seven beans, carrots, celery, onion, okra, corn, and stewed tomatoes, Soup is seasoned with garlic, bay leaves, cayenne, anise seeds, salt and pepper. Simmered over low heat and served warm.
Ingredients -
1/2 tablespoon Olive Oil
1 tablespoon crushed Garlic
1 cup diced Carrots
1 cup diced Celery
1 cup diced Onion
1 cup diced Okra
1 cup Corn Kernels
2 cups Vegetable Stock
1 (16 ounces) can Stewed Tomatoes
1/2 cup Tomato Paste
3 Bay Leaves
1/2 teaspoon Cayenne Pepper
1/2 teaspoon Anise Seeds
1/2 teaspoon Ground Black Pepper
1/4 teaspoon Salt

3/4 cup cooked Azuki Beans
3/4 cup cooked Black Beans
3/4 cup cooked Chickpeas
3/4 cup cooked Fava Beans
3/4 cup cooked Lentils
3/4 cup cooked Kidney Beans
3/4 cup cooked Pinto Beans

 
Preparation:

1. Add olive oil to large stockpot. Heat oil over medium heat.

2. Add garlic, carrots, celery, onion, okra, and corn to stockpot. Saute until tender.

3. Add vegetable stock, stewed tomatoes, tomato paste, cayenne pepper, anise seeds, pepper, and salt. Stir to combine.

4. Stir in azuki beans, black beans, chickpeas, fava beans, lentils, kidney beans, and pinto beans.

5. Simmer 30 minutes.
