Smoky Sage Lentil Soup

Onion, celery, carrot, garlic and sage are sautéed in olive oil to soften textures and flavors. Vegetable mixture is combined with vegetable broth, water, crushed tomatoes, tomato sauce, lentils, bay leaf, Italian seasoning, salt and pepper in large stockpot. Soup is brought to gentle boil and then simmered to cook lentils through. Liquid smoke added just before serving.

Ingredients -
2 tablespoons Olive Oil
1-1/2 cups chopped Vidalia Onion
1 cup chopped Celery
1 cup chopped Carrots
3 Garlic Cloves, minced
1/4 cup Fresh Sage Leaves, minced
2 (14.5 ounces) cans Vegetable Broth
4 cup Water
1 (28 ounces) can Crushed Tomatoes
1 (8 ounces) can Tomato Sauce
1 (16 ounces) bag Dry Lentils, washed
1 Bay Leaf
2-1/2 teaspoon Italian Seasoning
1/2 teaspoon Salt
1/2 teaspoon Fresh ground Black Pepper
1/4 teaspoon Liquid Smoke
 
Preparation:

1. Heat olive oil in a large saucepan over medium high heat.

2. Add onion, celery, and carrots, and saute 3-5 minutes.

3. Add minced garlic and sage, and saute an additional 2 minutes.

4. Add remaining ingredients, and bring to a boil.

5. Lower heat, cover, and simmer for 45 minutes to an hour, until lentils are tender.

6. Stir in liquid smoke and remove from heat.

7. Serve with a thick crusty bread.
